    Prepare the Filling

    In a mixing bowl, combine the shredded cooked chicken, shredded cheddar cheese, olive oil, salt, black pepper, and cumin. Mix well until all ingredients are evenly coated and seasoned.

Cooking

    Heat the Tortillas

    In a skillet over medium heat, lightly warm the corn tortillas for about 30 seconds on each side until they are pliable. Remove from the skillet and set aside.

    Assemble the Little Dilla

    Take one warmed tortilla and place a generous portion of the chicken and cheese filling on one half of the tortilla. Fold the other half over the filling to create a half-moon shape. Repeat with remaining tortillas and filling.

    Cook the Little Dilla

    In the same skillet over medium heat, add a little more olive oil if necessary. Place the folded tortillas in the skillet and cook for 2-3 minutes on each side or until the tortillas are golden brown and the cheese is melted.

    Serve

    Remove the Little Dillas from the skillet and let them cool slightly before slicing into wedges. Serve with your favorite salsa or guacamole.
