Prepare the Strawberries
Wash the organic strawberries thoroughly under cold water. Remove the stems and chop them into small pieces.

In a large pot, combine the chopped strawberries, granulated sugar, and lemon juice. Heat over medium heat, stirring occasionally until the mixture comes to a boil.

Once boiling, add the pectin and continue to boil for 1-2 minutes while stirring constantly. Remove from heat once the jam has thickened.

Pour the jam into sterilized jars and let it cool completely at room temperature before sealing.

On a serving platter or individual plates, spread a generous layer of goat cheese as the base.
