Preparation
- 1
Prepare the Fruits
Rinse the blueberries and strawberries under cold water. Remove the stems from the strawberries and slice them into halves or quarters, depending on their size. Set aside.
- 2
Soak the Goji Berries
In a small bowl, soak the goji berries in warm water for about 10 minutes to rehydrate them. Drain and set aside.
- 3
Juice the Lemon
Cut the lemon in half and juice it, making sure to remove any seeds. Set the lemon juice aside.
Blending
- 4
Combine Ingredients
In a blender, add the rinsed blueberries, sliced strawberries, soaked goji berries, coconut milk, cold-pressed apple juice, and the lemon juice.
- 5
Add Coconut Butter
Add the coconut butter to the blender mixture. This will add creaminess and a rich coconut flavor.
Blending Process
- 6
Blend Until Smooth
Blend all the ingredients together on high speed until the mixture is smooth and creamy. If the mixture is too thick, you can add a little more coconut milk or apple juice to reach your desired consistency.
- 7
Taste and Adjust
Taste the smoothie and adjust sweetness or tartness if needed. You can add a touch of honey or agave syrup if you prefer it sweeter.
Serving
- 8
Serve Chilled
Pour the smoothie into serving glasses. You can garnish with a few whole berries or a sprinkle of goji berries on top if desired.
- 9
