Method
Roasting the Vegetables

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Beets and Sweet Potatoes
Peel and chop the golden beets and sweet potatoes into bite-sized cubes. Place them in a large bowl.

Season the Vegetables
Add olive oil, ground cumin, paprika, salt, and black pepper to the bowl. Toss until the vegetables are well coated.

Prepare the Onions and Peppers
Slice the onion and bell pepper into strips. Add them to the bowl with the beets and sweet potatoes and toss to combine.

Roast the Vegetables
Spread the vegetable mixture onto a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
Preparing the Kale

Wash and Tear the Kale
While the vegetables are roasting, wash the kale thoroughly. Tear it into bite-sized pieces, discarding the tough stems.

Sauté the Kale
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the kale and sprinkle with salt. Sauté for about 5-7 minutes, until the kale is wilted and tender.

Combine Everything
In a large serving bowl, layer the sautéed kale, followed by the roasted vegetables.

Drizzle the Sauce
Drizzle the tahini ginger sauce generously over the top.

Sprinkle black sesame seeds on top for garnish.
