Red Cabbage Slaw

Method

Prepare Spaghetti Squash

    Roast the Squash

    Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside of the squash with olive oil, and season with salt and black pepper. Place the squash cut-side down on a baking sheet lined with parchment paper.

    Bake

    Roast the squash in the preheated oven for 30-40 minutes, or until the flesh is tender. Let it cool slightly, then scrape the flesh with a fork to create spaghetti-like strands.

Make BBQ Rub

    Combine Ingredients

    In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until well combined.

Prepare Red Cabbage Slaw

    Slice and Mix

    Shred the red cabbage and grate the carrot. In a large bowl, combine the cabbage and carrot.

    Dress the Slaw

    In a small bowl, whisk together apple cider vinegar, olive oil, honey, salt, and black pepper. Pour the dressing over the cabbage mixture and toss to combine. Let it sit for at least 10 minutes to allow the flavors to meld.

Assemble the Dish

    Combine and Serve

    On each toasted bun, layer the roasted spaghetti squash, sprinkle with BBQ rub, top with red cabbage slaw, and drizzle with Charlie's Select Rendezvous BBQ sauce. Serve immediately.
