Cauliflower Wings

Prepare the Cauliflower
Preheat your oven to 450°F (230°C). Cut the cauliflower into bite-sized florets and set aside.

Coat the Cauliflower
In a large bowl, combine the cauliflower florets, olive oil, garlic powder, onion powder, salt, and black pepper. Toss until the florets are evenly coated.

Bake the Cauliflower
Spread the coated cauliflower on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden and crispy, flipping halfway through.

Add Buffalo Sauce
Remove the cauliflower from the oven and toss it with the buffalo sauce until evenly coated. Return to the oven for an additional 10 minutes.
Grilled Tempeh

Prepare the Tempeh
Slice the tempeh into thin strips. In a bowl, combine soy sauce, smoked paprika, and olive oil.

Marinate the Tempeh
Add the tempeh strips to the marinade and let it sit for at least 15 minutes.

Grill the Tempeh
Heat a grill pan over medium-high heat. Grill the marinated tempeh for about 3-4 minutes on each side until golden brown.
Celery and Carrot Sticks

Prepare the Vegetables
Wash and cut the celery sticks into 3-inch pieces. Peel the carrots and slice them into sticks of similar length.
Cashew Ranch Dressing

Soak the Cashews
Soak the raw cashews in water for at least 2 hours or overnight for a creamier texture.

Blend the Dressing
Drain and rinse the soaked cashews. In a blender, combine cashews, water, lemon juice, garlic powder, dried dill, and salt. Blend until smooth and creamy.
