    Prepare the Sweet Potatoes

    Peel the sweet potatoes and dice them into small cubes, about 1/2 inch in size.

    Chop the Vegetables

    Dice the bell pepper and onion into small pieces and set aside.

Cooking

    Heat the Oil

    In a large skillet, heat the olive oil over medium heat until shimmering.

    Cook the Sweet Potatoes

    Add the diced sweet potatoes to the skillet and cook for about 10 minutes, stirring occasionally, until they begin to soften.

    Add the Onion and Peppers

    Add the chopped onion and bell peppers to the skillet. Stir to combine and cook for an additional 5-7 minutes, until the vegetables are tender.

    Season the Hash

    Sprinkle the salt, black pepper, paprika, and garlic powder over the mixture. Stir well to coat all the vegetables evenly and cook for another 2-3 minutes.

Serving

    Remove the skillet from heat. Top with chopped parsley or cilantro and sliced avocado if desired. Serve warm.
