Juicing the Beet

Using a juicer or blender, extract juice from fresh beets until you have 1 oz of beet juice. Strain through a fine mesh sieve if necessary to remove pulp.

Fill a highball glass with ice cubes to chill the glass while you prepare the cocktail.

Combine Ingredients

In a cocktail shaker, add 2 oz of gin, 1 oz of elderflower liqueur, 1 oz of fresh beet juice, and 0.5 oz of fresh lemon juice. Fill the shaker with ice and shake well for about 15 seconds.

Strain and Serve

Strain the mixture into the prepared glass filled with ice. Top off with 4 oz of tonic water and gently stir to combine.
