    Sauté the Mushrooms

    In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Add the baby bella mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender and have released their moisture.

    Pour in the tamari sauce and sprinkle the sesame seeds over the mushrooms. Stir well to combine and cook for an additional 2 minutes, allowing the flavors to meld.

    Remove from heat and stir in the chopped green onions. Set aside.

    Fry the Eggs

    In a separate non-stick skillet, heat the butter or oil over medium heat.

    Crack the eggs into the skillet, being careful not to break the yolks. Season with salt and black pepper to taste.

    Cook the eggs for about 3-4 minutes or until the whites are set and the yolks are still runny. If you prefer your yolks cooked through, cover the skillet and cook for an additional 1-2 minutes.

    Warm the corn tortillas in a dry skillet for about 30 seconds on each side to make them pliable.
