Instructions
- 1
Prepare the Cake Batter
Preheat your oven to 180°C (350°F). Grease and line four small ramekins or individual cake pans with parchment paper. In a heatproof bowl, melt the dark chocolate and unsalted butter together over a pot of simmering water (double boiler method). Stir until smooth and combined.
- 2
Mix Ingredients
Remove the bowl from heat and let it cool slightly. Stir in the granulated sugar until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and cocoa powder until just combined.
- 3
Bake the Cakes
Divide the batter evenly among the prepared ramekins. Bake in the preheated oven for about 12-15 minutes, or until the edges are set but the center is still slightly soft. Remove from oven and let cool for a few minutes.
- 4
Prepare the Ganache
While the cakes are cooling, prepare the ganache. Heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and add the dark chocolate, stirring until smooth and glossy.
- 5
Assemble the Dessert
Once the cakes are cooled, carefully remove them from the ramekins. Drizzle the chocolate ganache over the top of each cake. Serve with fresh berries and a dollop of whipped cream.
