Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Cut the cauliflower into bite-sized florets. In a large bowl, toss the florets with olive oil, salt, and black pepper until evenly coated.

Roast the Cauliflower
Spread the cauliflower florets in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until golden and tender, flipping halfway through.

Add Buffalo Sauce
Remove the cauliflower from the oven and place it back in the large bowl. Pour the buffalo sauce over the cauliflower and toss to coat evenly.

Finish Roasting
Return the sauced cauliflower to the baking sheet and roast for an additional 5-10 minutes until the sauce is slightly thickened and the edges are crispy.

Prepare Carrots
While the cauliflower is roasting, peel and slice the carrots into sticks or rounds for serving.

Once the cauliflower is done, remove it from the oven and let it cool slightly. Serve warm with blue cheese dressing drizzled on top, crumbled blue cheese, and carrot sticks on the side.
