Prepare the Vegetables
Wash and cut the seasonal vegetables into bite-sized pieces. Set aside.

Make the Tempura Batter
In a large bowl, combine the all-purpose flour, cornstarch, and baking powder. Gradually add the ice-cold water while whisking gently until just combined. The batter should be lumpy, do not overmix.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Vegetables
Dip the prepared vegetables into the tempura batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches until golden and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and place on paper towels to drain excess oil.

Prepare the Dipping Sauce
In a small bowl, whisk together the soy sauce, mirin, grated ginger, and sesame oil to create the dipping sauce.

Serve the crispy tempura vegetables hot with the dipping sauce on the side.
