Cook fries
Preheat oil to 350°F (175°C) for deep frying, or preheat oven to 425°F (220°C) for baking. If deep-frying, fry frozen fries in batches for 3–5 minutes until golden and crisp. If baking, toss fries with 1–2 tablespoons oil, spread in a single layer and bake 18–25 minutes, turning once, until crisp. Drain on paper towels and season immediately with fine salt.
Transfer hot fries to a large oven-safe platter or sheet tray if you plan to melt cheese under broiler for final assembly.
White Queso
Add dairy
Slowly whisk in 1 cup whole milk and 1/2 cup half-and-half until smooth. Continue to cook, whisking frequently, until the mixture thickens and just begins to bubble, about 3–4 minutes.
Finish queso
Lower heat to low and add 2 ounces cream cheese; whisk until melted and smooth. Stir in 4 ounces white American cheese and 2 ounces Monterey Jack cheese in small handfuls, stirring until fully melted and the sauce is glossy and smooth. Season with 1/2 tsp garlic powder, 1/4 tsp onion powder, 1/8 tsp white pepper, 1/4 tsp salt and 1 tsp pickled jalapeño or lime juice if using. Keep warm over the lowest heat, stirring occasionally. If sauce becomes too thick, thin with 1–2 tablespoons milk.
Toppings
Prepare bacon and jalapeños
Cook bacon until crisp (pan-fry, bake at 400°F/200°C for 15–20 minutes, or microwave until crisp). Drain on paper towels and chop into small pieces. Finely dice 2 jalapeños (remove seeds for milder heat). Shred 1 cup cheddar-jack if not pre-shredded.
Assemble loaded fries
Pile the hot fries on the platter. Spoon the warm white queso evenly over the fries, using as much as desired to coat. Immediately sprinkle the shredded cheddar-jack evenly over the queso-covered fries. Scatter the chopped bacon and diced jalapeños on top. If you want the cheddar to melt into the queso, place the assembled fries under a hot broiler for 1–2 minutes—watch closely to avoid burning. Remove and garnish with sliced chives or green onions if using.
Cinemark Slap Sauce®
Make the sauce by whisking together 1/4 cup mayonnaise, 1 tablespoon ketchup, 1 teaspoon mustard, 1/2 teaspoon hot sauce, 1/4 teaspoon paprika, 1/8 teaspoon garlic powder, 1/8 teaspoon onion powder and 1/8 teaspoon salt until smooth. Adjust hot sauce or seasonings to taste. Chill for 15–30 minutes to let flavors meld. Serve on the side for dipping or drizzle lightly over the finished fries.
