Activate yeast

In a small bowl combine warm water (about 100–110°F / 38–43°C), sugar, and instant dry yeast. Stir gently and let sit 5 minutes until foamy. If mixture doesn't foam, yeast may be inactive; start with fresh yeast.

In a medium mixing bowl, combine flour and salt. Make a well in the center.

Pour the foamy yeast mixture and olive oil into the flour. Mix with a spoon until a shaggy dough forms.

Turn dough onto a lightly floured surface and knead 5–7 minutes until smooth and elastic. If dough is sticky, sprinkle up to 1–2 tablespoons more flour as needed.

Form dough into a ball, place in a lightly oiled bowl, cover with plastic wrap or a kitchen towel, and let rise in a warm place 30–45 minutes, or until roughly doubled in size.
