Prepare chicken

Trim any fat from the chicken breasts and cut into roughly 1-inch bite-sized pieces. Aim for uniform pieces so they cook evenly (yields about 20–24 small nuggets).

Wet and dry stations

Set up three shallow bowls: one with the flour seasoned with 1/4 tsp salt and 1/8 tsp pepper; one with the beaten egg mixed with buttermilk; and one with the panko, grated Parmesan (if using), garlic powder, onion powder, smoked paprika, and remaining 1/4 tsp salt and 1/8 tsp pepper.

Bread the nuggets

Working in batches, dredge each chicken piece in flour (shake off excess), dip into the egg-buttermilk mixture, then press into the panko mixture until well coated. Place coated pieces on a wire rack or baking sheet while you finish the rest.

Heat a large skillet over medium heat and add 2–3 tablespoons vegetable oil to coat the bottom (enough for shallow frying). When oil is hot (test with a breadcrumb — it should sizzle), add nuggets in a single layer without crowding. Cook 2–3 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a rack or paper towel-lined plate to drain. Replenish oil as needed and keep cooked nuggets warm in a low oven (200°F/95°C).

Alternate - oven-baked method

Preheat oven to 425°F (220°C). Arrange breaded nuggets on a lightly oiled baking sheet or one lined with parchment. Lightly spray tops with oil. Bake 12–15 minutes, flipping halfway, until golden and internal temperature is 165°F (74°C).

Fries

Prep potatoes

If using whole potatoes, peel if desired and cut into child-friendly sticks about 1/3–1/2 inch thick. Rinse cut fries under cold water until water runs clearer to remove excess starch; then pat dry thoroughly with a clean towel.

Toss with oil and seasoning

Place dried fries in a bowl, toss with 1 tablespoon olive oil, 3/4 tsp kosher salt, 1/4 tsp black pepper and 1/4 tsp paprika (if using) until evenly coated.

Arrange fries in a single layer on a baking sheet lined with parchment or lightly oiled. Bake in a preheated 425°F (220°C) oven for 18–25 minutes, turning once halfway, until edges are golden and crispy. For extra crispness, broil 1–2 minutes at the end watching carefully.

Alternate - pan fry

Heat 1–2 tablespoons oil in a large skillet over medium-high heat. Add fries in batches and cook, turning occasionally, until golden and tender, about 10–12 minutes per batch. Drain on paper towels and season immediately with additional salt if needed.

Dipping & Finishing

Transfer nuggets and fries to a serving plate. Sprinkle chopped parsley over fries and nuggets if using. Serve warm with ketchup and ranch on the side for dipping.

For picky kids, you can serve nuggets plain, or cut into strips. Provide small ramekins of ketchup or other preferred sauces.
