Dough
Activate and mix
In a medium bowl, whisk together the flour, instant yeast, sugar and salt. Make a well and add the warm water and olive oil. Stir with a wooden spoon until a shaggy dough forms.
Knead
Turn the dough onto a lightly floured surface and knead for 5–7 minutes until smooth and elastic. If using a stand mixer, knead on low with the dough hook for 4–5 minutes.
Sauce
While the dough rises, mix the tomato passata (or pizza sauce) with garlic powder, dried oregano, salt and the optional sugar in a small bowl. Taste and adjust seasoning. Set aside.
Assemble & Bake
Preheat
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while preheating. If using a baking sheet, lightly oil or line it.
Shape dough
Punch down the risen dough and transfer to a lightly floured surface. For a kid-size pizza, divide into 2 equal portions (makes two small pizzas) or keep whole for one larger. Press or roll one portion into a 7–8 inch round about 1/4 inch thick. Transfer to a lightly oiled baking sheet or a piece of parchment paper (for a stone).
Sauce and cheese
Spread about 1/4 cup of the sauce evenly over the shaped dough, leaving a 1/2-inch border for the crust. Scatter 3/4 cup of shredded mozzarella over the sauce. If using, sprinkle 1 tablespoon of grated parmesan.
Bake
Bake on the preheated stone or baking sheet for 8–12 minutes, until the cheese is melted and bubbly and the crust is golden. Rotate halfway through baking if your oven has hot spots.
Garnish and serve
Remove pizza from oven, sprinkle with dried oregano or Italian seasoning and a pinch of red pepper flakes if desired. Let rest 2–3 minutes, then slice into kid-friendly wedges and serve warm.
