Marinate the Chicken
In a bowl, combine the chicken breasts with Texas Pete hot sauce. Let them marinate for at least 30 minutes, or overnight for best flavor.

Prepare the Breading
In a shallow dish, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Set aside.

Bread the Chicken
Remove the marinated chicken from the hot sauce and dredge each piece in the flour mixture, ensuring it is well-coated. Shake off excess flour.

Fry the Chicken
In a deep skillet or fryer, heat oil to 350°F (175°C). Fry the breaded chicken for about 5-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Biscuits
While the chicken is frying, bake the biscuit dough according to package instructions or your favorite recipe.

Slice the biscuits in half, place a piece of fried chicken on the bottom half, sprinkle with crumbled bacon and top with aged cheddar cheese. Place the top half of the biscuit on and serve warm.
