Cooking Directions

  1. 1

    Grilling the Salmon

Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil, and season with salt and black pepper. Place the salmon on the grill skin-side down and grill for 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

  2. 2

    Preparing the Asparagus

While the salmon is grilling, rinse the asparagus and trim the tough ends. Toss them in olive oil, salt, and pepper. Grill the asparagus for about 5-7 minutes, turning occasionally, until tender and slightly charred.

  3. 3

    Making the Hollandaise Sauce

In a heatproof bowl, whisk the egg yolks and lemon juice together. Place the bowl over a pot of simmering water (double boiler) and continue whisking until the mixture thickens. Slowly drizzle in melted butter while whisking continuously until the sauce is smooth and creamy. Season with salt and cayenne pepper to taste. Remove from heat.

  4. 4

    Serving

Plate the grilled salmon and asparagus. Drizzle with hollandaise sauce, and serve immediately.
