    Caramelize the Onions

    Heat olive oil in a skillet over medium heat. Add sliced onion and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized (about 10-15 minutes). Remove from skillet and set aside.

    Prepare the Spinach

    In the same skillet, add fresh spinach and sauté until wilted (about 2-3 minutes). Remove from skillet and set aside.

    Cook the Omelette

    In a bowl, whisk together the egg whites, salt, and pepper. Pour into the skillet over medium heat. Allow to cook for a few minutes until the edges start to set.

    Add Fillings

    Once the omelette is partially cooked, add the blackened chicken, caramelized onions, sautéed spinach, and crumbled goat cheese on one half of the omelette.

    Fold and Finish Cooking

    Carefully fold the other half of the omelette over the fillings. Cook for an additional 2-3 minutes or until the egg whites are fully set and the cheese is slightly melted.
