Caramelize the Onions
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes.

Prepare the Spinach
In the same skillet, add the fresh spinach to the onions and cook until wilted, about 2-3 minutes. Remove from heat and set aside.

Cook the Omelette
Heat the remaining tablespoon of olive oil in a non-stick skillet over medium-low heat. Pour the egg whites into the skillet, tilting the pan to spread them evenly. Cook until the edges start to set, about 2-3 minutes.

Finish Cooking
Gently fold the other half of the omelette over the fillings and cook for another 2-3 minutes until the cheese is slightly melted and the omelette is fully cooked.

Serve
Slide the omelette onto a plate, cut in half if desired, and serve hot.
