    Caramelize the Onions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes.

    Prepare the Spinach

    In the same skillet, add the fresh spinach to the onions and cook until wilted, about 2-3 minutes. Remove from heat and set aside.

    Prepare the Egg Whites

    In a bowl, whisk the egg whites with salt and black pepper until frothy.

    Cook the Omelette

    Heat the remaining tablespoon of olive oil in a non-stick skillet over medium-low heat. Pour the egg whites into the skillet, tilting the pan to spread them evenly. Cook until the edges start to set, about 2-3 minutes.

    Add Fillings

    Once the egg whites are mostly set, add the blackened chicken, spinach and onion mixture, and crumbled goat cheese to one half of the omelette.

    Finish Cooking

    Gently fold the other half of the omelette over the fillings and cook for another 2-3 minutes until the cheese is slightly melted and the omelette is fully cooked.

    Serve

    Slide the omelette onto a plate, cut in half if desired, and serve hot.
