    Make the Biscuits

    Preheat your oven to 450°F (232°C). In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.

    Shape and Bake the Biscuits

    Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick rectangle, then cut into rounds using a biscuit cutter. Place on a baking sheet and bake for 12-15 minutes or until golden brown.

    Prepare the Sausage Gravy

    In a skillet over medium heat, cook the Neese's sausage until browned. Sprinkle the flour over the sausage and stir to combine. Gradually add the milk while stirring to prevent lumps. Cook until the gravy thickens.

    Add black pepper and salt to taste. Simmer for a few minutes to meld the flavors.
