    Bring meats to temperature

    Remove all cured meats from refrigeration 15–20 minutes before plating to allow flavors and textures to relax. Keep slices folded or loosely arranged to avoid sticking.

    If any meats are in larger pieces, thinly slice against the grain to approximately 1–2 mm thickness. Fan or fold slices into loose rosettes or neat stacks for visual variety. Arrange each meat type in a separate small cluster on the board so guests can identify and mix flavors easily.

    Temper and prep cheeses

    Remove cheeses from refrigeration 20–30 minutes before serving to bring to room temperature. Wipe any excess moisture from rinds with a paper towel. If cheeses are large wedges, cut one or two serving pieces of each so guests can start serving easily, leaving the remainder whole or in large wedges.

    For the brie, score the top rind in a shallow crosshatch if desired and place intact wheel on the board. For the manchego and cheddar, slice or cut into thin wedges for easy picking; for blue cheese, crumble a portion into a small bowl or leave a chunk with a small cheese knife. Place each cheese in separate zones on the board to prevent flavor transfer.

Accompaniments

    Place cornichons or pickles in a small dish or pile them near meats for contrast. Scatter toasted marcona almonds in a small heap or dish to give crunch.

    Arrange dried apricots and fresh grapes in small clusters around the cheeses; they add sweetness that pairs with cured meats and sharp cheeses.

    Spoon fig jam into a small ramekin. Place whole grain mustard in another small dish. Drizzle honey lightly over the blue cheese portion or present honey in a tiny jar with a spoon for guests to drizzle as desired.

    Slice the baguette on the bias 1/2-inch thick. Lightly brush slices with olive oil and toast in a 190°C (375°F) oven for 6–8 minutes until just golden, or toast in a skillet. Garnish & Finishing

    Tuck small sprigs of rosemary or thyme between cheese wedges and meat piles for aroma and presentation. Drizzle 1 tablespoon extra-virgin olive oil sparingly over the manchego or on crostini if desired. Finish with a light grind of black pepper over the brie or blue cheese.

    Assemble the board: start by placing larger items (cheese wedges and small ramekins of condiments), then arrange meats around them, filling gaps with fruits, nuts, and pickles. Leave small spaces for utensils: cheese knives, small spoons for jam and honey, and toothpicks if desired.

    Serve with small plates and napkins. Recommend guests take a little of each element to balance flavors—fatty meat, salty cheese, crunchy cracker, sweet fruit, and tangy pickle.
