Method
Prepare Potatoes
Heat a large skillet (cast-iron preferred) over medium-high heat. Add 2 tbs olive oil + 1 tbs butter and let butter melt and foam.
Add the drained potatoes in an even layer. Sprinkle with 1 tsp kosher salt, 1 tsp black pepper, and 1 tsp smoked paprika. Cook without stirring for 3–4 minutes to develop a golden crust, then toss or flip pieces and continue cooking, stirring every 2–3 minutes, until potatoes are deeply golden and tender, about 12–15 minutes total.
Cook Bacon & Vegetables
While potatoes cook, heat a second large skillet over medium heat. Add chopped bacon and cook until edges are crisp and fat is rendered, 7–9 minutes. Transfer cooked bacon with a slotted spoon to a paper towel-lined plate, leaving bacon fat in the pan.
Eggs
In a medium bowl, whisk together 4 large eggs, 2 tbs whole milk, 1/4 tsp salt and 1/8 tsp black pepper until frothy.
Finish & Serve
Garnish with sliced green onions (white and green parts) and chopped cilantro if using. Taste and adjust salt and pepper.
