Method
Berry Panna Cotta
Bloom gelatin
Sprinkle 1 tsp powdered gelatin over 1 tablespoon cold water in a small bowl. Let sit 5 minutes to bloom.
Heat cream mixture
In a small saucepan, combine 1/2 cup whole milk, 1/2 cup heavy cream, 3 tablespoons granulated sugar and 1/2 tsp vanilla. Warm over medium heat until sugar dissolves and mixture is just below simmer (do not boil).
Incorporate gelatin
Remove pan from heat. Stir the bloomed gelatin into the warm cream until fully dissolved, about 30 seconds.
Add berry purée
Whisk in 3/4 cup strained mixed berry purée and 1/2 tsp lemon juice until smooth and evenly colored.
Set panna cotta
Pour the mixture into 6-8 small (2–3 oz) molds or shot glasses, leaving room for garnish. Chill in refrigerator at least 3 hours, preferably 4, until set.
Unmold and finish
Before serving, dip molds briefly in warm water and invert onto serving spoons or small plates. Top with a halved fresh berry and a few microgreens or edible flower petals from the Garnishes section.
Citrus Meringue Tartlette
Make tart dough
In a bowl, combine 3/4 cup all-purpose flour and 2 tablespoons powdered sugar. Cut in 3 tablespoons cold cubed butter until mixture resembles coarse crumbs. Add 1 egg yolk and 1 teaspoon ice-cold water; mix until dough just comes together. Press into a small ring mold or three 2–2.5 inch tartlet rings, lining bottom and sides evenly. Chill 20–30 minutes.
Blind bake
Preheat oven to 350°F (175°C). Line chilled tart shells with parchment and fill with pie weights or dried beans. Bake 12–15 minutes until edges are set and lightly golden. Remove weights and bake 3 more minutes. Let cool.
Make lemon curd
In a small saucepan, whisk 1 whole egg with 3 tablespoons granulated sugar and 2 tablespoons fresh lemon juice until smooth. Cook over low-medium heat, stirring constantly, until mixture thickens to a custard consistency (about 5–7 minutes). Remove from heat and whisk in 1 tablespoon softened butter and 1/4 tsp vanilla if using. Strain into a bowl to ensure smoothness; cool slightly.
Assemble curd in shells
Spoon cooled lemon curd into baked tartlet shells, filling nearly to the top. Chill while preparing meringue so curd firms slightly (10–15 minutes).
Make and torch meringue
Whip 1 egg white with 1/8 tsp cream of tartar until soft peaks form. Gradually add 2 tablespoons granulated sugar and continue to whip to glossy stiff peaks. Pipe or spoon small cloud-like meringues atop each tartlet. Using a handheld kitchen torch, lightly brown the meringue peaks until golden (or place briefly under a very hot broiler, watching constantly).
Garnish
Finish with a pinch of lemon or orange zest and a few toasted chopped pistachios from the Garnishes section.
Chocolate-Avocado Mousse Bite
Prepare avocado base
Place 1/2 ripe avocado in a small bowl or food processor. Mash or blend until very smooth.
Incorporate chocolate
Stir in 1 ounce melted dark chocolate (cooled slightly), 1/2 tablespoon unsweetened cocoa powder, 1 teaspoon maple syrup or honey and 1/8 tsp sea salt. Blend until completely homogeneous and glossy.
Chill and set
Portion the mousse into a small spoon or tiny cup. Chill 30–45 minutes to slightly firm. Before serving, sprinkle 1/2 tsp cocoa nibs (optional) and a few toasted pistachio pieces.
Plating & Finishing
Arrange the three miniature desserts (one panna cotta, one tartlette, one mousse bite) artistically on a small rectangular plate or tasting board. Use microgreens or edible flowers, halved fresh berries, a light dusting of powdered sugar or a few zest threads to add contrast. Ensure each element from Garnishes & Finishing is used where noted: berry halves on panna cotta, lemon zest and pistachios on tart, pistachios and cocoa nibs on mousse.
Serve chilled. These miniature desserts are best enjoyed within 6 hours of assembly for optimal texture and color.
