    Prepare the Filling

    In a mixing bowl, combine the fresh raspberries, granulated sugar, cornstarch, and lemon juice. Gently stir to coat the raspberries evenly. Set aside to let the mixture sit for about 10 minutes.

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Assemble the Pie

    Roll out the pie crust and fit it into a 9-inch pie pan. Pour the raspberry filling into the crust. Dot the filling with small pieces of butter.

    Add the Top Crust

    If using a second crust, place it over the filling. Cut slits in the top crust for steam to escape. Alternatively, create a lattice top with strips of crust.

    Beat the egg and brush it over the top crust. Sprinkle sugar on top for added sweetness and crunch.
