Prepare the Cake Batter

Add eggs, buttermilk, vegetable oil, and vanilla extract. Beat with an electric mixer on medium speed for 2 minutes. Stir in boiling water until well combined.

Bake the Cake

Pour the batter evenly into two greased and floured 9-inch round cake pans. Bake at 350°F (175°C) for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in pans for 10 minutes, then remove from pans and cool completely on wire racks.

Prepare the Frosting

In a saucepan over medium heat, combine sugar, evaporated milk, butter, and egg yolks. Cook while stirring constantly until thickened, about 12 minutes. Remove from heat and stir in vanilla, coconut, and pecans.

Assemble the Cake

Place one layer of the cake on a serving plate. Spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake with the remaining frosting.

Serve

Let the cake sit for at least 30 minutes to set before slicing and serving.
