Cooking and assembly

    Prepare griddle and bun

    Preheat a cast-iron skillet or flat-top griddle over high heat. Lightly butter or toast the cut sides of the hamburger bun until golden and set aside.

    Season the patty

    Pat the Brandt Prime beef patty dry and season lightly with salt and pepper on both sides.

    Sear and smash

    Place the patty on the hot surface and smash it quickly with a sturdy spatula to about 1/4 inch thickness. Cook for 1-2 minutes without moving to develop a deep crust.

    Flip and melt cheese

    Flip the patty and immediately place the American cheese slices on top to melt as the bottom half sears for another 1-2 minutes.

    Build the base

    Spread the special sauce on the bottom bun. Layer lettuce leaves, red onion slices, and dill pickle slices on top.

    Assemble

    Gently lift the cheesy patty and transfer it onto the prepared bun with the toppings. Cap with the top bun and press lightly to meld.

    Serve immediately. Optional: add extra pickle slices on the side.
