Prepare crepe batter

    Mix batter

    In a bowl, whisk together 1 cup all-purpose flour, 2 large eggs, 1.5 cups milk, 2 tablespoons melted unsalted butter, and 0.25 teaspoon salt until smooth. Let rest 20-30 minutes.

    Rest batter

    Cover and rest the batter to hydrate the flour and relax the gluten.

Cook crepes

    Cook crepes

    Heat a nonstick skillet over medium heat and lightly brush with melted butter. Pour about 1/4 cup of batter, tilt to spread into a thin circle. Cook 1-2 minutes until edges lift, flip, and cook 30 seconds more. Transfer to a plate. Repeat to yield 8-10 crepes.

Skate and sauce

    Prepare shallots

    Mince shallots and set aside.

    Sauté shallots

    In a skillet, heat olive oil over medium heat. Add shallots and sauté until translucent.

    Add wine and reduce

    Add white wine; simmer until reduced by about half.

    Stir in fish stock and heavy cream; simmer until sauce thickens slightly.

Cook skate

    Season skate fillets with salt and pepper. In a separate skillet, heat olive oil and 1 tablespoon butter; sear skate 2-3 minutes per side until opaque; remove and keep warm.

Assemble and serve

    Fill crepes and plate

    Place a crepe on each plate. Put a portion of skate in the center and spoon sauce over. Fold or roll the crepe around the filling.
