    Portion and chill beef

    Divide ground prime beef into four equal portions (~4 oz each) and chill on a tray until ready to season.

    Season patties

    Season both sides of each patty with 1/4 tsp kosher salt and 1/8 tsp black pepper, distributing evenly.

    Prepare onions and garlic mayo

    Thinly slice the onion. In a small bowl whisk mayonnaise with garlic powder to create a garlic mayo; set aside.

    Toast buns

    Lightly butter the cut sides of brioche slider buns. Toast in a skillet until golden and fragrant; set aside.

    Preheat cooking surface

    Heat a heavy skillet or cast-iron pan over medium-high with neutral oil until shimmering.

    Sear and smash patties

    Place beef portions on the hot pan and smash each into a 1/4-inch thick patty. Cook without moving 2-3 minutes until deeply browned crust forms.

    Spread garlic mayo on the bottom buns. Layer lettuce, tomato, and pickle slices on each bottom bun.
