Method

Joconde sponge (GF)

    Prepare oven and sheets

    Preheat the oven to 190°C (375°F). Line a baking sheet with parchment. Lightly dust with cocoa to help release.

    Whip egg whites

    In a clean bowl, whip the egg whites with the powdered sugar and salt until stiff peaks form.

    Whisk yolks and butter

    In another bowl, whisk the egg yolks with the melted butter until smooth.

    In a large bowl, whisk together almond flour and cocoa powder; fold in the yolk-butter mixture.

    Gently fold the whipped whites into the batter in two additions until just combined.

    Spread the batter into a thin, even layer on the prepared sheet and bake for 8–12 minutes until set and springy. Let cool slightly, then trim and cut into three equal strips for assembly.

Coffee Buttercream

    Make coffee blend

    Dissolve the instant coffee powder in 2 teaspoons hot water, then mix into 60 ml cooled espresso to create a strong coffee liquid.

    Cream butter and sugar

    Beat softened butter with powdered sugar until pale and fluffy.

    Beat in the coffee mixture and vanilla until smooth. Chill if needed before assembly.

Coffee Syrup (soaking)

    Prepare syrup

    Combine 60 g sugar with 60 ml hot espresso; stir until dissolved and let cool slightly.

    This syrup will be brushed on the Joconde layers to keep them moist.

Dark Ganache

    Heat cream

    Place cream in a small saucepan and bring just to a simmer.

    Make ganache

    Pour hot cream over chopped dark chocolate; wait 2 minutes, then whisk until smooth. Stir in butter until glossy. Let cool to spreading consistency.

Mirror Glaze

    Bloom gelatin

    Bloom gelatin powder in 60 ml cold water until softened.

    Prepare glaze

    Combine water, sugar, and glucose syrup in a saucepan; heat until sugar dissolves. Remove from heat and add bloomed gelatin and chocolate; stir until smooth. Blend if needed and strain. Let cool to about 30–32°C (86–90°F) before using.

Assemble

    Brush the first Joconde strip with the coffee syrup.

    Spread a generous layer of coffee buttercream over the soaked sponge.

    Place the second Joconde strip on top and brush with syrup again.

    Spread a thin layer of ganache over the second layer.

    Place the final Joconde strip on top. Optionally brush with syrup and lightly press to seal.

    Chill the assembled cake for 20–30 minutes to set the layers.

    Pour the cooled mirror glaze over the cake, tilting to cover evenly. Let glaze set before slicing.
