Puff Pastry Preparation

    Prep and bake puff pastry sheets

    Preheat oven to 400°F (200°C). Line baking sheets with parchment. Thaw puff pastry if frozen. Lightly roll and dock the sheets with a fork to prevent overexpansion.

    Bake and cool

    Brush the top surfaces with the egg wash (beat 1 egg with 1 tablespoon water). Bake 12–14 minutes until deep golden and crisp. Transfer to a wire rack to cool completely. If needed, trim to uniform rectangles for neat layers.

Vanilla Pastry Cream

    Heat milk with vanilla extract

    In a saucepan, combine the milk with a pinch of salt and the vanilla extract. Bring to a light simmer.

    Whisk yolks and sugar

    In a bowl, whisk the egg yolks with the granulated sugar until pale and slightly thick.

    Add cornstarch and temper

    Stir the cornstarch into the yolk mixture. Slowly whisk in a ladle of hot milk to temper, then return the yolk mixture to the saucepan.

    Thicken and chill

    Cook over medium heat, whisking constantly, until the custard thickens. Remove from heat and whisk in any remaining vanilla extract. Pass through a sieve if desired. Cover surface with plastic wrap and refrigerate until cold (at least 1 hour).

Fruit Filling and Assembly

    Wash and slice strawberries and kiwis; dice mango. Toss all fruit with lemon juice to prevent browning; refrigerate until use.

    Warm apricot jam with 1 tablespoon water until smooth. Brush the glaze over the top sheet for a glossy finish.
