Beurre Blanc

    In a small saucepan, combine minced shallots, white wine, and white wine vinegar. Simmer over medium heat until the liquid is reduced by about two-thirds and the mixture is aromatic.

    If using cream, add heavy cream to the reduction and simmer 1–2 minutes to slightly thicken.

    Reduce heat to the lowest setting. Whisk in the cold butter pieces a few at a time, allowing each addition to emulsify before adding more. Do not boil; keep the sauce just warm and emulsified.

    Finish with lemon juice, salt, and white pepper. Optional: strain through a fine-mesh sieve for a silky sauce. Keep warm on a very gentle heat until ready to serve.

Artichoke

    If using canned artichoke hearts, drain well and pat dry. Quarter or roughly chop to bite-sized pieces.

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté 1 minute until fragrant, taking care not to brown.

    Add artichoke pieces and sauté 5–7 minutes until tender and lightly browned. Deglaze with a splash of lemon juice if desired. Season with salt and pepper to taste.

Confit Tomatoes

    Preheat oven to 300–320°F (150–160°C). In a small baking dish, toss cherry tomatoes with olive oil, sliced garlic, thyme, salt, pepper, and sugar if using.

    Roast slowly for 25–30 minutes until tomatoes are blistered and jammy. Remove from oven and keep warm; the tomatoes will contribute sweetness and depth to the dish.

Market Fish

    Pat fish fillets dry with paper towels. Season both sides with salt and pepper.

    In a skillet, heat olive oil over medium-high heat. Sear fish fillets skin-side down (if skin-on) until the skin is crisp and golden, about 3–4 minutes. Flip and cook 2–4 minutes more until just opaque and cooked through.

    To plate, spoon a generous pool of beurre blanc on each plate, lay the fish atop, and arrange the artichokes and confit tomatoes beside. If desired, finish with a small pat of butter stirred into the sauce for extra sheen.
