Preheat the oven to 400°F (200°C). Line a large rimmed baking sheet with aluminum foil and place a wire rack on top to elevate the bacon.

In a small bowl, whisk together maple syrup (0.333 cups), light brown sugar (2 tablespoons), black pepper (0.5 teaspoons), and cayenne pepper (0.25 teaspoons) until the mixture is smooth and the sugar begins to dissolve.

Arrange 12 slices of thick-cut bacon in a single layer on the rack, making sure they do not overlap.

Brush about half of the glaze onto the tops of the bacon slices using a pastry brush, coating evenly.

Bake for 12–16 minutes, until the edges start to brown and the glaze thickens slightly.

Remove the baking sheet from the oven and brush the remaining glaze over the tops of the bacon slices. Return to the oven and bake for an additional 2–3 minutes to set the glaze.
