    Remove the prime rib roast from the fridge and pat dry with paper towels.

    In a small bowl, whisk together kosher salt, black pepper, minced garlic, chopped rosemary, thyme, and parsley to create the herb-salt blend.

    In a separate bowl, whisk together olive oil, gluten-free Dijon mustard, almond flour, and crushed pink peppercorns to form a paste.

    Rub the herb-salt blend all over the surface of the roast, then brush with the olive oil–Dijon paste, pressing to form an even crust.

    Let the coated roast sit at room temperature for 20-30 minutes to help the crust adhere.

    Preheat the oven to 450°F (230°C). Heat a heavy skillet over high heat and sear the roast on all sides for 2-3 minutes per side to brown the crust.

    Transfer the roast to a roasting pan. Reduce the oven temperature to 325°F (165°C) and roast until the internal temperature reaches 125-130°F (52-54°C) for medium-rare, about 90-120 minutes depending on size.
