    Preheat the oven to 200°C (392°F). Line a baking sheet with parchment paper and lightly grease the parchment with about 0.5 tablespoon of butter.

    Prepare the cheese

    Carefully unwrap the Epoisses cheese wheel. If desired, trim a thin slice from the top to create a flat surface for stable pastry contact.

    Roll pastry

    Roll the puff pastry sheet on a lightly floured surface into a square large enough to completely wrap the cheese, about 12x12 inches (30x30 cm).

    Season cheese

    Sprinkle thyme over the cheese, then dust lightly with salt and pepper.

    Wrap in pastry

    Place the cheese in the center of the pastry, bring corners together to enclose completely, and pinch to seal. If desired, chill for 10 minutes to help seal.

    Seal and finish

    Brush the outside of the pastry with beaten egg. If using optional dusting, sprinkle a light dust of cornstarch or flour on the surface for extra crisp.

    Bake in the preheated oven for 20-25 minutes, until pastry is deeply golden and the cheese inside is melted.
