    Prepare scallops and season

    Pat the Day Boat scallops completely dry with paper towels. Lightly season both sides with kosher salt and freshly ground black pepper.

    Sear the scallops

    Heat 1 tablespoon olive oil in a heavy skillet over medium-high heat until shimmering. Arrange the scallops in a single layer and sear 2–3 minutes on the first side until deep golden. Flip and sear another 1–2 minutes on the other side until just opaque. Transfer the scallops to a warm plate.

    Brown butter garlic base

    In the same skillet, reduce heat to medium and add 4 tablespoons unsalted butter. Cook, swirling, until the butter smells nutty and turns a light amber. Add the minced garlic and cook 30 seconds until fragrant.

    Deglaze and finish the sauce

    Pour in 1/4 cup dry white wine to deglaze, scraping up any browned bits. Simmer until reduced by half. Stir in 1 tablespoon lemon juice and 1/2 teaspoon lemon zest, then add 1 tablespoon capers. Return the scallops to the pan and toss briefly to coat in the sauce.

    Finish and serve

    Remove from heat, sprinkle with 2 tablespoons chopped fresh parsley, and adjust salt and pepper to taste. Plate the scallops with the lemon-butter sauce spooned over and serve immediately.
