    Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper. Scrub fingerling potatoes under cold water, pat dry, and optionally halve very large ones lengthwise for even cooking.

    If desired, boil a pot of salted water. Add potatoes and boil for 4 minutes, then drain and pat dry. This step helps create extra crisp edges but can be omitted for a quicker version.

Coat and season

    Make the seasoning emulsion

    In a large bowl, whisk together olive oil, minced garlic, smoked paprika, dried rosemary, salt, and black pepper until well combined.

    Add the potatoes to the bowl and toss until each piece is evenly coated with the oil and spice mixture.
