    Prepare the Ingredients

    Slice the ribeye steak into thin strips. Slice the onion, green bell pepper, and mushrooms.

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion, green bell pepper, and mushrooms, and sauté for about 5-7 minutes until they are softened. Season with salt and black pepper. Remove the vegetables from the skillet and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high. Add the sliced ribeye steak, sprinkle with garlic powder, and cook for about 3-5 minutes until browned and cooked through. Season with additional salt and black pepper to taste.

    Combine and Melt Cheese

    Return the sautéed vegetables to the skillet with the cooked steak. Stir to combine. Lay the provolone cheese slices over the mixture and cover the skillet with a lid. Allow the cheese to melt for about 2-3 minutes.

    Assemble the Sandwiches

    Slice the hoagie rolls lengthwise. Use a spatula to scoop the cheesesteak mixture into each roll, making sure to include equal amounts of steak, vegetables, and melted cheese.

    Serve

    Serve the cheesesteaks hot, optionally with condiments of your choice.
