    Take the USDA Prime Strip steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This allows for even cooking.

    Pat the steaks dry with paper towels. Generously season both sides with kosher salt, freshly ground black pepper, and garlic powder.

    Searing the Steak

    In a large skillet or grill pan, heat the olive oil over medium-high heat until shimmering. Carefully add the steaks to the pan and sear for about 4-5 minutes on one side without moving them.

    Flipping the Steak

    Using tongs, carefully flip the steaks and add the sprigs of fresh rosemary to the pan. Continue to cook for another 4-5 minutes for medium-rare, or until your desired doneness is achieved.

    Remove the steaks from the pan and transfer them to a cutting board. Tent loosely with foil and let them rest for 5-10 minutes to allow the juices to redistribute.
