Cooking Instructions

  1. 1

    Prepare the Sauce

In a medium skillet, melt the butter over medium heat. Add the onion, green bell pepper, and celery, sautéing until tender, about 5 minutes.

  2. 2

    Add Flavorings

Stir in the garlic and cook for another minute. Then add the diced tomatoes, Cajun seasoning, and Worcestershire sauce. Let it simmer for about 10 minutes until thickened.

  3. 3

    Finish the Sauce

Stir in the chopped parsley, and adjust seasoning with salt and pepper if needed. Keep warm.

  4. 4

    Prepare the Salmon

Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and pepper.

  5. 5

    Grill the Salmon

Place the salmon on the grill, skin side down, and grill for about 6-8 minutes per side, or until cooked through and flakes easily with a fork.

  6. 6

    Serve

Plate the grilled salmon and generously spoon the Tchoupitoulas sauce over the top before serving.
