Prepare the Onions
Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set aside.

Make the Batter
In a large bowl, combine the flour, cornstarch, baking powder, salt, black pepper, and paprika. Whisk together. Gradually add the cold sparkling water, stirring until the batter is smooth and thick.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil to 375°F (190°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off, then carefully place them in the hot oil.

Fry the Onion Rings
Fry the onion rings in batches for about 2-3 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.

Serve hot with your favorite dipping sauce.
