    Make the Lobster Stock

    In a large pot, melt 2 tablespoons of butter over medium heat. Add lobster shells and sauté for about 5 minutes until fragrant. Add onion, carrot, celery, and garlic; cook for another 5 minutes until vegetables are softened. Stir in tomato paste and white wine, scraping the bottom of the pot. Add fish stock or chicken broth, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes. Strain and reserve the stock.

    Prepare the Bisque

    In the same pot, melt the remaining 2 tablespoons of butter over medium heat. Add the strained lobster stock back to the pot. Stir in the heavy cream and bring to a gentle simmer. Add the cooked lobster meat and cayenne pepper. Simmer for another 10 minutes to heat through and blend flavors. Adjust seasoning if needed.

    Ladle the bisque into bowls, garnish with chopped parsley, and serve hot.
