    Prepare the Steak

    Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. Pat dry with paper towels.

    Season the Steak

    Rub both sides of the filet with olive oil, then sprinkle with salt and black pepper to taste.

    Heat the Pan

    In a heavy skillet or cast-iron pan, heat over medium-high heat until very hot.

    Sear the Steak

    Place the filet mignon in the hot pan and sear for 3-4 minutes on one side. Do not move the steak during this time.

    Flip and Add Butter

    Flip the steak and add butter and rosemary to the pan. Cook for an additional 3-4 minutes for medium-rare, spooning the melted butter over the steak.

    Rest the Steak

    Remove the filet from the pan and let it rest for 5 minutes before slicing.

    Serve

    Slice the filet mignon and serve it warm, optionally with sides of your choice.
