    Prepare the Cream

    In a saucepan, heat the heavy cream and the vanilla bean (split and scraped) over medium heat until it just begins to simmer. Remove from heat and let it steep for 15 minutes.

    Whisk Egg Yolks

    In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and smooth.

    Combine Mixtures

    Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking. Remove the vanilla bean pod.

    Strain the Mixture

    Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any cooked egg bits.

    Bake the Custard

    Preheat your oven to 325°F (160°C). Pour the custard into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-40 minutes, or until set but still slightly jiggly in the center.

    Chill

    Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours or until completely chilled.

    Caramelize the Sugar

    Sprinkle a thin layer of brown sugar over the top of each chilled custard. Use a kitchen torch to caramelize the sugar until it forms a crispy crust. Alternatively, you can broil them in the oven for a few minutes. Let cool for a minute before serving.
