Preparation and Serving

    Prepare the Lobster Tails

    Using kitchen shears, carefully cut the top shell of the lobster tail lengthwise down the center. Gently pry the shell apart and pull the lobster meat out, keeping it attached at the base. Lay the lobster meat on top of the shell.

    Grill the Lobster

    Preheat the grill to medium-high heat. Place the prepared lobster tails, meat side down, on the grill. Cook for about 6-8 minutes, or until the meat is opaque and cooked through.

    Prepare the Clarified Butter

    In a small saucepan, melt the clarified butter over low heat. Keep warm until serving.

    Serve

    Once the lobster tails are cooked, remove them from the grill. Sprinkle with sea salt and garnish with fresh parsley. Serve immediately with warm clarified butter and lemon wedges on the side.
