Mousse Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a pot of simmering water (double boiler method) or in the microwave in 30-second intervals, stirring until smooth. Allow to cool slightly.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip. Set aside.

    Separate the Eggs

    Separate the egg whites from the yolks. In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.

    Combine Yolks and Sugar

    In another bowl, whisk together the egg yolks and granulated sugar until pale and creamy. Stir in the melted chocolate and vanilla extract until well combined.

    Fold in Ingredients

    Gently fold the whipped cream into the chocolate mixture. Then, carefully fold in the beaten egg whites until no white streaks remain. Be gentle to keep the mixture light and airy.

    Chill the Mousse

    Divide the mousse into serving dishes and refrigerate for at least 2 hours, or until set.

    Serve chilled, optionally garnished with whipped cream or chocolate shavings.
