Instructions
- 1
Prepare the crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes until set, then allow to cool slightly.

Make the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the sugar and mix until well combined. Add the sour cream, vanilla extract, and flour, mixing until smooth. Add the eggs one at a time, mixing just until incorporated after each addition.

Combine and bake
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes or until the edges are set but the center still jiggles slightly. Turn off the oven and leave the cheesecake inside for an additional 1 hour.
