Prepare the Salmon
Season the Atlantic salmon fillets with salt and black pepper on both sides.

Sear the Salmon
In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets and cook for about 4-5 minutes on each side until cooked through and golden brown. Remove from the skillet and set aside.

Make the Tchoupitoulas Sauce
In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent. Add the diced tomatoes and cook for about 5 minutes until they soften.

Finish the Sauce
Stir in the heavy cream, chopped basil, capers, lemon juice, salt, and pepper. Allow the sauce to simmer for 5-7 minutes until thickened slightly.

Serve
Place the salmon fillets on plates and generously spoon the Tchoupitoulas sauce over the top. Serve immediately.
