Prepare the Chicken
Season the chicken thighs with salt, black pepper, and smoked paprika. Let them marinate for at least 30 minutes.

Cook the Chicken
In a large pot, heat vegetable oil over medium heat. Add the marinated chicken thighs and brown them on both sides, about 5-7 minutes per side. Remove and set aside.

Prepare the Base
In the same pot, pour in the blended tomato sauce and cook for 10-15 minutes until it thickens and the oil starts to separate from the sauce.

Add Rice and Broth
Add the long-grain rice to the pot, stirring to coat with the sauce. Pour in the chicken broth, add thyme and bay leaves, and bring to a boil.

Combine and Simmer
Once boiling, reduce the heat to low and return the browned chicken to the pot. Cover and let it simmer for 25-30 minutes, or until the rice is cooked and has absorbed most of the liquid.
