Salad Preparation

    Prepare the Vegetables

    Wash and dry the mixed greens thoroughly. Halve the cherry tomatoes, dice the cucumber and red bell pepper, shred the carrot, and thinly slice the red onion. Dice the avocado just before serving to prevent browning.

    Combine the Ingredients

    In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, carrot, red onion, and avocado.

    Make the Dressing

    In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper until well combined.

    Dress the Salad

    Pour the dressing over the salad and toss gently to ensure all ingredients are coated. Sprinkle crumbled feta cheese on top.

Vanilla Crème Anglaise Preparation

    Heat the Cream and Milk

    In a medium saucepan, combine the heavy cream and milk. Heat over medium heat until just below boiling, stirring occasionally.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and sugar until the mixture is pale and slightly thickened.

    Temper the Egg Yolks

    Once the cream mixture is heated, slowly pour it into the egg yolk mixture, whisking constantly to prevent curdling.

    Cook the Mixture

    Return the mixture to the saucepan and cook over low heat, stirring constantly with a wooden spoon until it thickens enough to coat the back of the spoon (about 5-7 minutes). Do not let it boil.

    Add Vanilla

    Remove the saucepan from heat and stir in the vanilla extract. Allow the crème anglaise to cool slightly before serving.
